Crispy Roast Potatoes
- 16 potatoes
- 2 tablespoons plain flour
- 3/4 cup goose fat
Preheat your oven to 190°C or gas 5. Then wash the potatoes, peel and chop them into halves or quarters.
Put the potatoes into a pan filled with boiling and slightly salted water. Leave the potatoes to simmer for about 5 – 10 minutes. Add the fat to a roasting tin and heat it. Drain the potatoes, transfer them to the roasting tin and toss them to coat them with the fat.
Bake in the preheated oven for about an hour until they are golden and crispy.

Christmas Pudding With Whiskey Cream
- 3/4 cup butter
- 1 orange, zested
- 3 tablespoons maple syrup
- 1 cup brown sugar
- 4 eggs
- 3/4 cup self-rising flour
- 1½ teaspoon baking powder
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- A handful of crushed almonds
- 5.5 ounces raisins
- 5.5 ounces sultanas
- 2/3 cup double cream
- A splash of whiskey
- A splash of Irish liqueur or to taste
Prepare 1½ liter of pudding with the orange zest. Then, beat the butter and sugar with a mixer, then add the eggs, vanilla extract, baking powder and cinnamon, and mix with a large spoon.
Mix in the raisins, maple syrup, sultanas, and crushed almonds. Grease a pudding bowl and transfer the pudding into it.
Cover the bowl with a sheet of buttered greaseproof paper. Take a basin and fill it half way with water.
Place the bowl with the pudding in the basin and steam it until all set. Check the water level in every 30 minutes and keep it the same.
Make the whiskey cream with a splash of whiskey and cream the Irish liqueur. At the end, flood the pudding with the warm whiskey.
